Easy & Quick French Toast

With Mock Bananas Foster Sauce


This is my go-to recipe for the perfect French toast. It only uses a few ingredients and is so simple you can whip it up in just a few minutes, and the homemade bananas foster takes it to the next level. While it tastes best right after its made, the French toast and bananas foster can be stored separately in the refrigerator.



Time: 20 min total

Yields: 3 pieces French toast and about 1/4 cup bananas foster; 1 serving


Ingredients:

French toast

  • 3 slices sandwich bread (I like to use soft, thick sliced bread but whatever you have on hand will work)

  • 1 egg

  • 1/4 cup milk

  • 1/4 teaspoon cinnamon

  • Butter, for cooking


Bananas foster

  • 1 large, ripe and firm banana

  • 2 teaspoons brown sugar

  • 1 tablespoon butter

  • Dash of cinnamon


To make the French toast, crack the egg into a bowl and whip it with a fork until completely mixed and foamy. Mix in the milk and cinnamon.

Melt about 2 tsp butter on a cast iron pan over medium heat. While the butter is melting, dip a piece of bread in your egg mixture, coating both sides. If you like softer French toast, let the bread soak in the mixture.

Place the bread on the cast iron pan and cook until brown. Flip and cook the other side. Repeat dipping and cooking with the remaining pieces of bread, adding butter to the pan as needed.

Place the French toast on a plate and cover with tin foil.


To make the bananas foster, first cut the banana into 1/4-inch-thick slices. Then melt the butter in a small pan over medium heat. I find that a small cast iron pan with a lip works best, but use whatever you have on hand.

Once the butter is melted and slightly bubbly, add the bananas, spreading them around to create a single layer so none of the pieces overlap. Cook until yellowed on the underside, then flip.

Add the brown sugar and begin stirring the bananas around. The bananas are done when the brown sugar is completely dissolved and the bananas are cooked through. They may be a little smushed, but that's ok.


To serve, pour the bananas foster over the French toast. For an extra treat, top with whipped cream or sprinkle with powdered sugar. Enjoy!
