Cozy Fall Breakfast

Plus: 3 Must-Read Books


This fall I've been super busy with school, work, and events, and I wasn't sure if I was going to be able to write a post for this month. But I recently created this recipe for a delicious pumpkin-bread-in-a-mug and it's super quick and easy! It goes really well with a thick layer of foamed milk or whipped cream. Ingredients:

  • 3 tablespoons flour

  • 1 1/2 teaspoons brown sugar

  • 1/2 teaspoon baking powder

  • 1/8 teaspoon cinnamon

  • Nutmeg, allspice, and ground cloves (just a little bit)

  • 2 tablespoons quick oats

  • 2 tablespoons pumpkin puree

  • 1 tablespoon vegetable oil

  • 1 tablespoon milk

  • 1/4 teaspoon vanilla

*1/4 teaspoon pumpkin pie spice can be substituted for cinnamon, nutmeg, allspice, and cloves


Combine the flour, brown sugar, baking powder, and cinnamon in a mug. Add just a dash of nutmeg, allspice, and cloves, and stir in oats with a fork.

Stir in the pumpkin puree, vegetable oil, milk, and vanilla until it's smooth. Sprinkle a few more oats over the top if you'd like.

Microwave for 45-60 seconds on high. Serve warm. Tastes best when paired with a fireplace, warm blanket, and a good book!


Speaking of good books, I've been adding to my reading list and here are three books I've really loved!

  1. Pride and Prejudice by Jane Austen

    I don't love old books and I used to scoff at the mention of Jane Austen, but I finally read this one and it's so good! It follows the lives of the Bennett girls as they navigate life and romance. The writing is beautiful and the story is engaging!

  2. My Fine Fellow by Jenneike Cohen

    A twist on the old movie My Fair Lady, this book tells the story of two friends as they set out to turn a street vendor into a refined chef. Humor and romance add just the right amount of flavor to the fun story, and I loved getting to know the characters and learning more about historical cooking.

  3. Romanov by Nadine Brandes

    This is an interesting fantasy take on the historical Romanov family. Even though it's technically historical fiction, the reality of the story made me intrigued, and I could not put it down. I love how the author perfectly combines fantasy with actual historical events, plus a dash of romance (of course).
